Lime juice is rich in phenolic compounds, with a total phenolic content (TPC) determined was 502.54 ± 14.52 mg GAE/L, being flavanones glycosides the major sub-class, especially hesperidin (316.66 ± 9.22 mg/L) and eriocitrin (16.25 ± 0.47 mg/L), phenolic acids (like ferulic acid (8.58 ± 0.25 mg/L). β-carotene (30 µg/100g) is the most abounded carotenoid found in lime juice. The antioxidant capacity of the lime juice extracts was evaluated using DPPH free radical scavenging assays and the value of the antioxidant capacity was 183.67 ± 3.78 µM TE.
