FOOD UPCYCLING: Innovating from By-products and Food Waste
On November 10, 2022, at the School of Engineering (Escola Técnica Superior de Enxeñaría), the Galician Food Cluster organized the workshop “FOOD UPCYCLING: Innovating from By-products and Food Waste.” The FoodChemPack group at the University of Santiago de Compostela (USC), coordinators of the VALICET project, participated in Session II – Advances in R&D towards Food Upcycling, with the presentation “Valorization of Post-harvest Residues and By-products in the Mediterranean.” This contribution highlighted the project’s commitment to sustainable innovation through the upcycling of agro-industrial waste.
